Flavour Pairing: Something slow roasted (pork shoulder, belly, oxtail, beef shin), mountain of charred veg.

A dark liquid, inky.  A good swirl releases a chorus of aroma; black fruits, worn leather, tad of spice. The taste is rich & intense.  An abundance of plums and blackberries, balanced with fine tannin acidity.  Long and rich. Vibrant and layered.  There are over 15 varietals in this field-blend, all 120+ years old, so open it at least an hour beforehand to let it sing. ABV: 14.5%.
