Nestled in the dramatic Gorges gu Gouleyrous, between Tautavel and Paziols in the foothills of Corbières, Mas de Mouton Noir is the epitome of organic, natural winemaking. Accessible only by rugged mountain roads, the journey to Cedric Mouton’s estate is an adventure, but it’s worth it. The breathtaking landscape, fast-flowing rivers, and rugged terrain reflect the purity and vitality of his wines.

Cedric drove across the river in his 4x4 to greet us with a big grin. We meet his horse Banzai, ‘I ride him naked every day to feel nature all around me.’  We meet his (beautiful, youthful) girlfriend, enough already, we meet the white goose…

Cedric’s journey into winemaking began unexpectedly. Originally practicing the ancient Chinese art of Qigong, Cedric learned to balance the energy of the body and nature. This holistic approach found a home in winemaking, where Cedric applied Qigong principles to terroir health and vineyard practices. What began as a hobby quickly became his life's work, producing 100% natural wines crafted with the same philosophy.

Terroir & Grape Varieties at Mas de Mouton Noir

Cedric farms 6.5 hectares of land, planting indigenous grape varieties including Muscat Petit Grain, Macabeu, Grenache Gris & Noir, Carignan, Syrah, and Mourvèdre.

The soils, a mix of clay-limestone and shale, combined with organic farming methods, provide a foundation that ensures the wines are as pure and expressive as the landscape itself.

Winemaking Philosophy: Minimal Intervention, Maximum Expression

The winemaking process at Le Mas du Mouton Noir is as natural as possible. Grapes are harvested by hand, either whole or destemmed, and fermentation takes place in steel or fibre vats. In 2022, Cedric introduced amphora vats from Georgia to continue his commitment to traditional, low-intervention techniques.
